#27 Kheema Mirch














Spicy Crispy Chillies stuffed with kheema!

Cook the kheema separately in garam masala, ginger garlic paste, vinegar, pepper and salt.

Slit and deseed the chillies. Stuff the kheema mixture generously into the chillies. Run a wet finger around the chillies to clean them. Dip them in egg batter and bread crumbs.

Heat oil in a non stick pan, place the chillies in the pan in single layer, cover and cook till the chillies cooked.

Arrange them on a serving plate and serve hot.

#26 Chicken Momos















Momos without maida!! Wow! Thank you Nivedtai for the recipe!! 😍😍 Quick, easy and the momos look so pretty!!

Ingredients:
Minced chicken
Finely chopped onion
Grated garlic
Grated ginger
Soya sauce
Vinegar
Salt and pepper
Coriander leaves
1 teaspoon of oil
Soaked rice

Method:
Soak the rice in water and keep aside for 20 mins.
In a mixing bowl, add minced chicken and all the ingredients, except rice. Mix well.
Make small balls of the meat.
Drain the water from the rice.
Roll the balls in the rice such that the rice covers the entire surface.

Steam cook the momos. Momos will be ready in 15mins. Serve them hot with chilli garlic sauce.

#25 Chicken Pot Pie










Stuffed with chicken, roasted garlic, chilli flakes, cheese, white sauce and topped with bread crumbs and more cheese 😋😋

Used these moulds after a very long time. 😍😍

Chicken Pot Pie Recipe
For puff pastry sheet:
1 cup maida
1 cup atta
Pinch of corn flour
Pinch of salt
Two tablespoons of oil/butter
Water to make dough

Stuffing:
chicken cubes, roasted garlic, chilli flakes, cheese, white sauce, pinch of baking powder and topped with bread crumbs and more cheese

While rolling the sheet, add some butter to the dough.
Spread the sheet in a greased baking bowl. Pour the stuffing mix.
Top it up with bread crumbs and cheese .
Bake for 15 mins in a pre heated oven.

#23 Cabbage Manchurian











Cabbage balls:

I used the fry option in microwave. So very less oil 😍😍
Ingredients:

Thinly Sliced Cabbage 2 Cups*
Onion 1 Thinly Sliced
Green Chilli 2 Finely Chopped
Finely Chopped Coriander Leaves 1/4 Cup
Curry Leaves Few
Gram Flour 3 Tablespoon
Corn Flour 3 Tablespoon
Rice Flour 3 Tablespoon
Red chilli Powder 1 Teaspoon
Salt To Taste
Oil 1 tablespoon


Manchurian Sauce recipe:
¼ teaspoon Corn flour (corn starch)
2 tablespoons Water
2 tablespoons Sesame Oil
2 teaspoons Ginger finely chopped
2 teaspoons Garlic finely chopped
1-2 Green chilies finely chopped
½ cup Onion finely chopped
1 tablespoon Tomato Ketchup or tomato sauce
1 tablespoon Soy sauce
1 ½ teaspoons Chilli sauce
1 teaspoon White distilled vinegar
Salt to taste
Black pepper powder to taste
1 tablespoon Spring onion (green onion or scallion) Green stalk, chopped

#22 Krunchy Khari Puffs














Easy snack with tea! Nowadays everyone is looking for some refreshments along with tea.
This Krunchy Khari can also be served as an appetizer with cocktails.

For topping, I have used basic white sauce, roasted garlic and cheese. Baked only for 10 mins. Quick and yummy!!
Wish I had some ham to add. That would have been perfect.

#21 Veg Stir Fry (Tofu)












Simple and quick stir fry dish.
Marinated the tofu separately in chilli powder, soya sauce, salt and pepper. Cooked it in a separate pan.

Stir fry:
Onions
Baby corn
Mushrooms

Sauces: soya sauce, vinegar, teriyaki sauce

Then added the tofu and garnished with coriander leaves.

Healthy breakfast sandwich with boiled eggs, lettuce, a dash of salt pepper and a sprinkle of grated cheese.
And we got lucky, had some liver paste to spread on the bread slice.

#19 Cabbage Rolls / Wraps










Since it was Friday night, wanted to cook something interesting with cabbage. So decided to make these cabbage rolls.
First boiled the cabbage after separating the leaves. Chilled the leaves.

Filling:
Liver- minced cooked in garam masala, vinegar, soya sauce, ginger garlic paste, black pepper and salt.
Roasted garlic
Sauteed mushrooms
Onions

Filled the cabbage leaves with two tablespoons of liver filling and garnished with coriander leaves.

I think I should try adding some crushed peanuts next time. Just like lettuce wraps!!! Yumm!! 😍😍

#18 Liver Treat!!!





Liver fry as appetizers with cocktails prepared by our inhouse bartender.

Liver green masala with pav and chopped onions. Awesome combination!! 🥰🥰

#17 Breakfast Sandwich



























Sandwich filling:
Grated potatoes, thin-sliced onions, chopped tomatoes, grated cheese and cut kothmeer (coriander).

Cook all the ingredients in a pan. Sprinkle some chaat masala, salt and pepper.

Spread butter and green kothmeer chutney on the bread. Place the filling and evenly spread it.
Grill the sandwich in butter on the pan.

The easy breakfast sandwich is ready!! Enjoy it with tomato ketchup.

#16 Mushroom & Egg Fried Rice








Ingredients:
2-1/2 cups rice (preferably basmati)
2 cups sliced mushrooms
2 eggs
1 green chilli
1 tablespoon chopped garlic
3 to 4 chopped green onions
1 cup chopped onions
1 teaspoon vinegar
1 teaspoon soya sauce
1 teaspoon Pepper
Salt to taste

Add 1/2 teaspoon oil and 1 teaspoon lime juice to the rice after washing. Lightly saute the rice in a pan and cook it separately.

Marinate the sliced mushrooms in all the spices and sauces.
Saute onions. Add green chilli and garlic. When the onions are light brown, add the eggs. Cook the eggs just like scrambled eggs.
Add the mushrooms and saute only for 5 mins.
Remove from flame and add the green onions.
Add the rice once it is cooked and mix well.
Garnish with roasted garlic and green onions.

You can even bake this rice with some cheese on top. Wow! Yummy!! 😋

#15 Crispy Bhindi








Marinated in red chilli powder, haldi, rice flour, rava, salt and one tablespoon oil.

After 15 minutes, directly cooked in a month stick pan. Added one chopped onion, shallow fried.

Crispy Bhindi in very less oil! 😍🤣


#14 Stir-fried Chicken








Chicken marinated in one teaspoon butter, fresh  ginger garlic paste, red chili powder, black pepper, salt, soya sauce and vinegar.

After two hours, stir fried in rice bran oil.
Tastes best when served immediately!! Why would one wait anyway 😜🥰🥰

#13 Chicken Fried Rice








When you want to make only one dish, chicken fried rice can never go wrong. Can be served with soup, salad or some appetizers.
I cooked the rice in chicken broth, so the rice was moist enough to be had without gravy.

Garnished with roasted garlic, green onions and some extra shredded chicken.

#12 Daal Paratha













Healthy & Tasty!
Good use of left over green moong daal.
I added some grated carrots.
Yummy parathas for lunch with pickle 🥰

#11 Focaccia Bread










Ingredients:
2 cups wheat flour
1/2 cup milk
2 eggs
1 tablespoon butter
2 cloves garlic
1 teaspoon baking powder
a pinch baking soda
thyme 1 teaspoon
rosemary 1 teaspoon
salt 1 teaspoon
olive oil 1 teaspoon
crushed chill flakes

Soak the thyme and rosemary leaves in olive oil. Beat the eggs. Add butter, garlic, pepper, baking powder and soda and whisk to blend well. Add the soaked thyme and rosemary along with the oil. 
Add this blended mixture to the flour and mix well. Add little water if required for uniform consistency.
Preheat oven to 180 deg.
Pour the mixture in a greased baking container.
Add grated cheese (parmesan preferably) on top and garnish with crushed chilli flakes and thyme.
Bake in the oven for 20 mins. 

Enjoy with olive oil dip or your favorite dressing 😍😍

#10 Egg Drop Lemon Coriander Soup










Boil grated carrots, one onion, and some chopped green beans.
Keep the broth aside.
In a pan, take a spoon of olive oil. Saute I cup chopped onions, 1 tablespoon garlic and green chili.
Once the onions are light brown, add the grated carrots, coriander stems and green beans. Add a cup of sliced mushrooms, vinegar and soya sauce.
Add the vegetable broth and add more water as required.
Soak 1/2 cup all-purpose flour in a cup of milk.
Add the milk to the soup to make it creamy.

When the broth starts boiling lower the flame. Now take egg white (2 eggs) in a bowl. Whisk it.
Slowly drop the egg white in the broth, stirring continuously. You will see the egg white forming white strands and lumps (just like in sweet corn soup).
Keep stirring and garnish with coriander leaves.

Serve hot with a side of stir-fried veggies.


#9 Scrambled Twist














Simple scrambled eggs with a twist. 😉
We had only 3 to 4 slices of bread due to the lockdown. Well, never mind!!
So I cut them into bite-size pieces. Prepared scrambled eggs with chopped onions, roasted garlic, cheese and kothmeer (cilantro). Salt and pepper to taste.

On the side, just lightly saute the bread pieces on 1 teaspoon butter.
Add salt and pepper. Add the bread to the scrambled eggs and mix well.
Garnish with roasted garlic and kothmeer!!

Breakfast is ready!!!
