#6 Samosas














My favorite samosa!!! I can literally have a samosa at any time of the day. For an evening snack, while shopping, during the interval at the theater and definitely for breakfast during these lockdown days.

This is filled with potatoes and peas.
Next time, I plan to make kheema samosas.


#5 Mushroom & Cheese Pockets













Fusion cooking is fun and makes a boring evening into a delicious treat. Well, just the previous week, mom had prepared sweet appes in the traditional pan specially designed for appes. The appes were awesome and crispy. Since then I wanted to try something different in that pan.
Finally, when Armaan (my son) wanted to have something cheesy, I decided to try the mushroom and cheese pockets. I replaced the rava which is used in appe with flour, which would go well with the mushrooms.

Ingredients:
1/2 cup maida (all-purpose flour), 1/2 cup wheat flour, 1/2 cup milk, 1/4 cup water, 1 teaspoon baking powder, 2 eggs, 5 sliced mushrooms, grated cheese, oregano, salt, and pepper.
Mix all the ingredients. Use a pan that is generally used to make appe .
Grease it well with oil and pour the mixture such that each pocket is half-filled.

When they turn light brown along the circumference, turn them and let them cook in oil.
Serve them hot with tomato ketchup.


#4 Egg Pizza













When you want to make something delicious and different with eggs for breakfast, try this egg pizza. Easy and quick. Especially, when you do not have bread to go with your omelet or scrambled eggs,
The egg pizza will serve as an amazing option.

Saute onions, chopped garlic and tomatoes in butter. Add oregano, crushed chili flakes and any Italian seasoning of your choice. Beat eggs with salt and pepper. Add some milk to blend the mixture well. Once the onions are light brown pour the egg mixture and let it settle in the pan. You can add some ham and top it up with cheese. Cover the pan with a lid. The cheese will melt. When you see the cheese changing color, just cut wedges like a pizza.

And you have your egg pizza ready to be served.




#3 Crispy Cauliflower



Crispy cauliflower tossed in honey, soya sauce and red chili powder.
Garnish with green onions.

#2 Chocolate Walnut Brownie














Contents:

Egg - 1
Oil or Melted butter - ¼ cup (60 ml)
Honey or Maple Syrup - ⅓ cup (80 ml)
Milk - ½ cup (120 ml)
Vanilla Essence - 1 tsp
Whole Wheat Flour / Atta - 1 cup (120 grams)
Baking Powder - 1¼ tsp
Salt a pinch
Cocoa powder - ½ cup + more as needed
Top up with walnuts


Preheat oven to 180 degrees C. Line a muffin pan with cupcake cases.
Take egg, oil, vanilla, milk and honey in a bowl and whisk well.
Add in wheat flour, salt, baking powder and cocoa. Mix well.
Fold gently.
Scoop it into the lined muffin pan, top up with more chocolate chips and pop it in the oven and bake for 20 to 25 mins.
Remove it and enjoy warm.


#1. Kheema Frankie




















Confined indoors, the best way to cheer up yourself is street-side food. Immediately I can think of the Mumbai special kheema Frankie. And when I think of it, I have to make it. :)
So one lockdown evening, we decided to have kheema Frankie.

Here is a quick recipe for those interested:
Cook the kheema separately in oil. Add garlic, black pepper, garam masala powder, red chili powder and salt. Do not add water at all. 
Cut onions (finely chopped) and marinate in chaat masala, red chili powder and salt.
Cut kothmeer/ cilantro and keep aside.

For Baida Roti:
Roll the chapatis (I used wheat flour). make egg batter with salt and pepper. Whisk the mixture.
Place the chapatis on a greased pan, pour egg batter to cover the surface and turn over, repeat on the other side of chapati too. You can even brush the chapati with egg batter before placing it on the pan.

Place the kheema, onions, kothmeer and add a dash of chaat masala. Then make a wrap and make it crispy. 

Enjoy with ketchup if you like. I prefer without ketchup.
