Fusion cooking is fun and makes a boring evening into a delicious treat. Well, just the previous week, mom had prepared sweet appes in the traditional pan specially designed for appes. The appes were awesome and crispy. Since then I wanted to try something different in that pan.
Finally, when Armaan (my son) wanted to have something cheesy, I decided to try the mushroom and cheese pockets. I replaced the rava which is used in appe with flour, which would go well with the mushrooms.
Ingredients:
1/2 cup maida (all-purpose flour), 1/2 cup wheat flour, 1/2 cup milk, 1/4 cup water, 1 teaspoon baking powder, 2 eggs, 5 sliced mushrooms, grated cheese, oregano, salt, and pepper.
Mix all the ingredients. Use a pan that is generally used to make appe .
Grease it well with oil and pour the mixture such that each pocket is half-filled.
When they turn light brown along the circumference, turn them and let them cook in oil.
Serve them hot with tomato ketchup.
