Saute onions, chopped garlic and tomatoes in butter. Add oregano, crushed chili flakes and any Italian seasoning of your choice. Beat eggs with salt and pepper. Add some milk to blend the mixture well. Once the onions are light brown pour the egg mixture and let it settle in the pan. You can add some ham and top it up with cheese. Cover the pan with a lid.
